We have known Francois for many years now, and according to us, Café Capital has been the brightest shining start in terms of Coffee Quality in Belgium ever since.
This conversation came out of a three-day visit to Brussel which resulted in a Coffee Tour around Belgium (Antwerpen, Gent & Brussel).
We met up with Francois is his newly opened Roastery just outside of the city center, and had a conversation about his decision to scale down his Coffee Business to fewer Coffee Shop in order to focus on what really matters for him, Coffee Quality.
