About the coffee
Susana Lopez Gallo has carefully prepared this small lot of only 168kg, grown and processed on her farm El Susorro located in the Antioquia region of Colombia.
Ripe cherries of Caturra Chiroso were picked and pulped over several days, and subsequently stored in open tanks, undergoing a total of 96 hours of fermentation in water before undergoing a delicate drying process. El Susorro, a 30 hectare coffee farm situated at an average of 1950 meters above sea level, uses a 3:2 ratio of direct sunlight and shading to ensure the healthy maturation and longevity of the various varietals Susana grows.
It is our first season purchasing this lot.
