About the farm
Las Margaritas is one of the 5 farms owned by Cafe Granja la Esperanza. It is a family business since they bought Finca Potosì in 1945. Specialised in growing only organic coffees, mostly specialty coffee varietals.
Las Margaritas is their biggest farm, with 13 lots total with close to 95'000 coffee trees.

About the coffee
Manual and rigorous picking. Adequate equipment for the de pulping process, which is done without water. Coffee is stirred and sensorial tasted to determine the ideal fermentation based on the cup profile wanted. Fermentation time for this coffee ranges between 19 and 22 hours in wholes cherries, then the cherries skin is taken out to start the second fermentation step in parchment and mucilage last for 35 hours.
The Sudan Rume is is a rare coffee with a beautiful flavor profile, usually ranking pretty high in competition. This varietal was discovered in Sudan near the border with Ethiopia. It's a naturally-occurring varietal from the Bourbon family, bursting with red fruit and floral flavors, but very low-yielding.
